Gluten free / Dairy Free and food allergy Resources and Help

I've been allergic to wheat gluten and dairy for more than 10 years.  It was a struggle at first but now there are very few items that I miss.  There are some areas where things are hidden so I want to tell you about those, and then I will give a list of some of my favorite sites and keep updating this blog when I find new items I like.  Recently I found that I was also allergic to soy.  I was eating a soy based ice cream and was getting hot flashes and feeling really run down.  So I have had to look even further in to my dairy free alternatives and have found coconut milk and almond milk to be amazing.

As for hidden lactose, a lot of medications, even over the counter have lactose in them in the "inactive" ingredients.  So, make sure to read all the labels before buying your new script and/ or things like Midol.
Also gluten is in things like soy sauce,  a lot of salad dressings, soup bases and sauces.  So, at first it might seem like your food has to be plain but it really doesn't.

Homeopathic medicine has LACTOSE in the pills.  So opt for the liquid versions.

Always look at INACTIVE ingredients when looking at medications and supplements.

Most probiotics have lactose in them.

It seems like a huge step when you change your diet so drastically, but honestly, I think it is so much better for our systems and our minds to not have foods that make you feel tired and/or bloated or congested.  Just the fact that you have to be conscious before you put something in your mouth is a huge plus to getting healthier.

I will list a lot of things that I have found yummy yet don't think just because they are free of certain allergies that they are healthy.  I like chocolate a lot and sweets so I will let you know some yummy ones so you don't have to do the trial and error that I did.  Trust me there are some yucky versions of these foods.

BTW- SOY LECITHIN gives the same reaction as soy.  So if someone makes desserts or you buy a candy bar and it has this ingredient, and you normally don't tolerate soy, don't eat it!
It makes me bloated, flushed, and my belly gets crampy.  Soy in general is not that great for you and there is no reason people can't use coconut milk, almond milk, etc.  It's much better for you.  A lot of women, including myself get hot flashes and night sweats when they have milk and think they are having pre menapause and go on meds thinking that's what it is and not they soy they eat in their protein bars.

ALSO AGAVE-  I have NO idea you could be allergic to it.  I had two months where I found this raw chocolate listed below by coracoa.  Their chocolate is healthy and delicious.  However, ever day I had this tightness in my chest and thought I was having acid reflux or something serious was going on with my lungs and heart.  It turned out to be an agave allergy.  Really listen to your body!

Gluten Free/Dairy Free Taco Salad

This taco salad is easy to make and delicious.

This recipe is for two people.
I'm not a big fan of measurements and cook mostly by feel, so feel free to experiment with portions.

1/2 pound of ground white meat chicken (organic preferred)
2 large avocados
1 box of small tomatoes
Romaine lettuce
Pepperocini
1 Lime
1 Lemon
Corn chips
Lawrys seasoning salt
Pepper
Olive Oil

Heat a frying pan that is covered in olive oil.
Add the ground chicken to this.
Quickly add- celery, pepperocinis, lawrys salt, pepper, lime and lemon juice.
Stir continuously until meat is cooked all the way through and there is no red left.
All the ingredients should mix together so all the meat is covered with seasoning and the celery and peperocini is throughout.

In a bowl mix two avocados with about 15 small, chopped tomatoes, add some lime and stir until this turns in to a smooth consistency.

In a large salad bowl cut romaine lettuce in small pieces.
Add chicken mixture and stir.  You can add more olive oil if needed and more lawrys salt.
On top add the guacamole.
Line the salad bowl with corn chips.

Enjoy!

Feel free to add other ingredients like cheese, salsa, refried beans, etc.

KG's Double layer Chocolate Chip Cake Gluten free/dairy free/soy free

I love Chocolate cake and this allergy free recipe is easy and delicious!

Use Bob's red mill mix however, ignore the directions on the back of the bag.

Ingredients

1 Bag of Bobs red mill chocolate brownie mix
1/2 cup organic applesauce
4 tablespoons of chia seed gelatin
2 cups of vanilla almond milk
1 whole bag of enjoy life mini chocolate chips.
1/4 cup of soy free earth balance margarine

Preheat oven to 425

Use olive oil to grease two round non stick baking dishes.

In a bowl add all the ingredients above except the chocolate chips.  (those are for icing)
Use an electric mixer and mix ingredients until thoroughly combined.

*If it feels dry at all add a bit more applesauce and/or vanilla almond milk just don't over do it

Put 1/2 the mix in each baking dish.
On top put 1/2 of the bag of mini chocolate chips on top of each mix in the baking dish.
Bake for approximately 25 minutes or until a toothpick or fork comes out clean.

Let cool for about 30 minutes and then carefully put one half on a plate.
Do not spread the chocolate chips on that layer.
Then put the other layer on top, carefully.
Spread the chocolate chips carefully with a warm spoon to look like icing.

This cake takes great right away but by the next day it is AMAZING!
The chocolate chips and icing will get hard and taste like a candy bar.
I use these chocolate chips on top of brownies, cookies, etc and wait until the next day just to eat the top!

*Make sure to wrap the cake overnight so it doesn't harden or lose it's moisture.
