Paleo banana bread with blueberries
2 tablespoons of melted coconut oil
4 large eggs (or applesauce if you are vegan)
3 tablespoons of honey
1 tablespoon of vanilla extract
1/2 teaspoon of apple cider vinegar
1/2 cup coconut flour
1/4 cup almond meal
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup coconut milk
(unsweetened - not canned)
I use so delicious in refrigerator
3 large ripe bananas
-preheat oven to 350
-grease pan with some coconut oil
-put ALL ingredients in blender at the same time
-once fully blended add as many blueberries as you want
-cook for 50 minutes or until fork comes out clean
-let cool for an hour and enjoy
